Taffy Apple Salad Recipe

I made this salad last week and it is delicious.  It's probably more a fall or winter salad because of the fresh apples, but I make it often as a side dish for summer cookouts.  I found it a few years ago in the newspaper, and could eat a whole bowl of this stuff by myself.  There's something about the combination of flavors and the crunchy peanuts that I like.

Taffy Apple Salad

One (20 oz.) can pineapple tidbits
2 cups miniature marshmallows
½ t. vinegar
1 T. all-purpose flour
½ cup sugar
one egg, beaten
8 oz. frozen whipped topping, thawed
2 cups peeled, diced apples
1 ½ cups cocktail peanuts
Apple for garnish

Drain pineapple; reserve juice. Mix pineapple and marshmallows; set aside. In a saucepan whip together pineapple juice, vinegar, flour, sugar and egg. Heat until thick. Refrigerate overnight. Next day mix thickened sauce and whipped topping. Add pineapple mixture, then add apple and peanuts. Serve garnished with apple slices.

I didn't bother garnishing with apple slices.  Once again, please don't judge this recipe by my lousy picture.  It's delicious!

  1. I've had this before and it is delicious!

Coralie, I cannot get on your other blog to visit your Red post. It throws me off as a "corrupted" file!

I just didn't want you to think I had forgotten you!

  2. I'm a dork. Disregard my Coralie thing on the other post. I was looking at my reminder list and she always has vintage recipes on hers.

I'm sorry for being so silly.

    BUT,

    The salad still looks delicious!

  4. I'm copying this for my files - it looks a bit like an old-fashioned ambrosia salad, but more interesting. Pot luck, here I come!
