Pink Salad AKA Pink Stuff for PINK SATURDAY

Some years back I put this recipe up for Pink Saturday.  There are probably a bunch of people that weren't here then, so I decided to share it again.  In our family we have always called this recipe PINK SALAD or PINK STUFF.  Actually, it can be a side dish or a dessert.  I got this recipe from a friend in the 1970's while living in Virginia.  Personally, I could eat the whole thing myself.



Congealed Salad (AKA PINK Salad or PINK Stuff)

1 small can crushed pineapple
1 6 oz. Jello (any flavor…I like raspberry)
1 12 oz. Carton Cool Whip
2 c. buttermilk
½ - 1 cup chopped nuts

Combine undrained pineapple and Jello in small saucepan. Heat until Jello dissolves. Mix Cool Whip and buttermilk; add nuts. Stir in gelatin mixture, mixing thoroughly. Put in mold or long rectangular pan. Let set for 4 hours. (I do it overnight.) I find it helpful to spray the mold lightly with Pam…it comes out of the mold a lot easier. Serves: 12. (I use a wire whisk for mixing the ingredients together.)

You can make it look fancy by garnishing it with some fresh fruit.  I used a Tupperware mold that I've had since the year of the flood.

    I remember years ago , this was the rage to take to parties at work and it always was a big hit! Thanks so much for stopping by!! No, I would probably not like living where you do because I suffer from Heat and Sun Sensitivity because of medications and Auto Immune Disease. Here is NEPA, the humidity is horrific.Yes, this is my hubby's least Summer delivering mail as he will be retiring in Sept. The heat is a killer for him too. I just posted my faux fire place transformation if you are interested.

  4. Betty, this looks sooo good. I always get a table spoonful of congealed salad at church covered dish functions. So does Mrs. Jim but she never makes any. Your recipe looks very easy, I might would make us some. I'd substitute chocolate chips or green olives or ??? (nothing crunchy until or later) as my doctor doesn't allow nuts.
    Was that the flood of 1979? We had 33 inches of water in our house on Providence Street in Friendswood.

  6. Pink Stuff is definitely a better name than Congealed Salad. The latter name has me shuddering. lol I'm not too keen on making molds, but I'm certainly okay about eating food such as Pink Stuff. :-)

  7. Hi Betty, your pink stuff is quite an interesting treat. My mother and aunt both made many of these when I was growing up. I still have a recipe for a frozen fruit salad that my sister-in-law Joyce always showcased at our phamily dinners. Nothing but smiles and good memories when seeing these dishes.   9. My family likes a jello mold I make at holidays --it looks like a rainbow! I've been making it for many years. We always say there is always room for jello. I ahve to try your recipe someday--my granddaughter will like it because it is pink!
